That tip of greasing the spatula sounds like a good one. Mixing the cornmeal with cold water before putting it in the boiling water is a good one too. Adding dry meal to boiling water frequently cause it to boil over.
Fried cream of wheat sounds interesting, I might have to buy some and try it.
