anybody make red beans and rice?

I've only had it at Popeyes. It's the only thing they sell that I like. This recipe sounds good but I've never made it before.

I'll probably have to use dried kidney beans based on availability.  Any tips?
We get the boxed Zatarans at Wally World and I’ll spice it up some with hot sauce/hot salt

I've used some boxed mixes but, while they can be good, I'm moving more towards cooking from scratch like I used to do.
I know it's not likely, but I worry about shtf scenarios. Being able to work with staples can help with food fatigue which can be a real thing.
Well, I gotta go, those nice young men in their clean white coats are here with my straightjacket. They're coming to take me away, hehe haha!

The beans are almost done, the rice is ready. The broth is way beyond Popeye's, I'm going to call it a win!
