The color suggests a very tasty egg salad!
For me tonight, I'm using my favorite BBQ sauce on grilled chicken breast, some corn, and a baked potato. I cut up a green onion, crumbled a strip of bacon, and will top the potato with sour cream.

Plus a little salt and a squirt or two of yellow mustard. Go easy on the mayo. Add a couple of spoonfuls and mix. Add a little at a time to desired consistency. Always use Dukes mayo. Accept no substitutes. Add sweet salad cubes, not relish, cubes. I usually make a 12 egg batch.

I learned this when I was just a rugrat helping my Mama make it. My Mama was the best southern cook that ever lived! I’ll open up an industrial sized can of whoop ass on anyone who says different.

I miss my Mama’s cooking almost as much as I miss her.

Small salad, lettuce/kalamata olives/feta cheese/diced tomato with Kraft zesty Italian dressing. I was going to also finish the chicken from last night with baked potato and corn but I guess the salad filled me up. Oh well, that'll give the short ribs another day to thaw in the fridge.

I had the BBQ chicken for breakfast. Braising the short ribs in the oven (my goodness, $9/lb for bone in short ribs!) with cheap merlot/carrots/onions/celery/fresh rosemary. I get tired of beef in red wine quickly but it's nice every month or two. Going to put that on some plain rice and serve with a similar salad to last night except I ran out of feta cheese and added a couple pepperoncinis on the side.
I pretty much used this recipe but I added a sprig of rosemary and a metric buttload of carrots.

I need to figure out how to make pimento cheese as it’s 50 miles to Trader Joe’s & nobody sells it locally. Looks easy to make from all the on line recipes 

Made macaroni salad yesterday morning (pasta that cools in a fridge for 24+ hours increases the resistance starch like rice and that’s a very good thing) & then had it with along with baked BBQ chicken legs tonight for dinner
