Beef stew, finally - tommag - 11-02-2024 I haven't felt like cooking so the chuck roast just sat in the fridge along with the vegetables. Today is the sell by date so I got off my kiester and went to work on it. It took me an hour to dredge/brown the chuck as well as peel the vegetables. So now the rutabagas/parsnips/carrots/celery and onions are happily simmering with the beef. I thought about throwing the jalapenos I had in the fridge in, but my neighbor Lynn is allergic to all peppers so I didn't since this 10" dutch oven full of stew is way too much for me. I do love a beef stew, especially with lots of parsnips! Dave raved about my beef stew last year but now he doesn't like stew. He said my peach cobbler was great but Lynn doesn't like peaches. I'm getting a message here. Time to cook much smaller portions.
