portion input wanted. - tommag - 06-18-2024

I like to do random things on the stove for neighbors.  I'm thinking a pot of minestrone for a family here and I measured my biggest pot, did the π r square thing and it came out to 1.72 gallons with barely enough room to stir. That works out to 14- 2 cup bowls, max.
They are a blended family with 9 kids, so 11 people.  Adolescent kids can eat a bunch.  Do you folks think this would be adequate with some nice crusty bread?

Do you deliver to northeast Texas? I'd like to get on the list.

How long to get to you from Franklin Kentucky since we are on the road 🤣🤣🤣🤣

Well, Spokane Washington.

Monday I put some pinto beans in the crockpot with nothing more than bay leaves and ham hock along with a diced onion. I took a couple servings to a different neighbor and they raved about it. Usually I add some salt and pepper but I didn't have to this time. That'll be my chow for Tuesday and Wednesday.

Turns out Tamara and Nate will only have 2 kiddos this week so I guess I don't need to make 1.7 gallons. It's been a long time since I've made a good minestrone and I'm looking forward to making another batch! I might make a big pot and only add the pasta at serving time so it'll keep well in the freezer. Canned minestrone is good, but my own version is so much better!

We had a cold tomato/veggie soup that the restaurant called gazpacho and it was incredible, have never had it before & the restaurant said it dates back to colonial America

I want to try making it one of these days it was soooo good

Tomatoes (technically a fruit but don't put it in your fruit salad Big Grin ) and vegetables always go together well in a soup!
