shrimp etouffee - tommag - 06-19-2024

I stumbled on a recipe for shrimp etouffee and it sounded good.  Now, I picked up 2 lbs of shell-on headless shrimp that I put in the freezer for a later date.  The reason for the shell-on shrimp is to use the shells for a soup stock as required in this recipe.
Anyway, I've never had etouffee before and wonder if any of you have and what you think about it?

Have a Cajun restaurant the wife really likes about 50 min south of us so we go there every now and then

it’s good but not my favorite but the wife loves it

We stopped at the Iowa I 80 truckstop for supper & they had shrimp on the buffet & could not keep it stocked 🤣🤣🤣🤣🤣

Crawdads are rare out here in the stores, but I do like them better than shrimp.  I used to catch them myself, but now you have to have a fishing license, construct your traps to state standards, as well as have minimum size limits etc.  Unless you went out frequently it's not worth it to me anymore.  Good old Washington department of absolutely not!  If I only used the tails like I used to, I bet the rest of the crawdads would make a potent stock!

When I finish off the minestrone tomorrow, I'm pretty sure my stove is going to New Orleans on Sunday.

Wife did not want to cook today, so it’s Chick Fil A salad & bacon/chicken sammich (not that good)

Funny things that pass through my mind. Etouffee is basically a fish gravy. My psychiatrist is a little concerned about me.
