Delicato squash

A month or two back I bought a delicato squash at the farmers market along with acorn and butternut squash. I was going to cook one tonight but that didn't go well. 
I have never seen a squash this difficult to cut. I had to baton the knife to get into it and it broke apart by the time I was done. Is it possible to hybridize the dang things with hickory? Maybe they're not good storage squash? 
Anyhoo, there's an acorn squash in the oven now.

Delicato is close to ornamental only imo. The only squash I really like is the smooth - skin yellow squash.

The guy I bought it from said it's not as sweet as a butternut, but very good. It certainly looks like an ornamental.
