Greens!

My neighbor asked if I needed anything from the store and I responded with beet, turnip, and collards in that order. Since Yoke's market opened the new store I've only seen spinach and kale there. Imagine my surprise when she came over with 3 bunches of beet greens!
Today's dinner is going to be excellent!

I like beets but I've never tried the greens.How do they compare to collards and turnip greens? I've had lots of those.

I find them milder than turnip greens.
I spent new years in the hospital so I'm making up for it today. Tonight's dinner will be hopping John with a bunch of greens. The big hamhock will be for the hopping John and the small one will be for the greens. I do my hopping John a bit different, I cook my rice with the blackeyed peas.

As I'm sure you've learned by now, hopping John is a traditional new years dish in the deep south. It simbolizes wealth and prosperity for the new year. I'm not big on all that stuff, but anytime I can combine ham, beans and rice I'm happy!

Our hat-tip to tradition was cabbage and onions with Eckrich Sausage and blackeyed peas. That should keep us in good luck and rolling in wealth for the coming year.
