chicken noodle soup

Nothing fancy, just sauteed onions, carrots, garlic and celery.  Took some chicken thighs out of the freezer, added water and chicken bullion powder. That's currently simmering with a bay leaf, thyme, and pepper.  I'll pull the chicken out and shred it while the wide egg noodles are cooking, then put it back in.
The broth is just right! It's hard to screw this one up but I'll try my darndest!

Don't forget the chicken feet! They're supposed to be what give it its healing properties.

I've never used them. I saw some at the store last week but not today.  Im guessing it's like shanks and hocks, where the real richness comes from.

I would think they'd just be used in the stock and then disposed of.

Ha, Chinese love chicken feet

Best way I had em was BBQ in Philippines like a lollipop 🤣

Well, I screwed it up as much as I could. Half as many noodles would've been a soup. As it is, it turned into chicken and noodles, not soup. The flavor was perfect! I'll put it into the WIN category!

Yep, that's the case here.  Maybe a touch of cornstarch would perfect it.

My dad used to use the expression, “Livin’ high on the hog” He explained that the higher you go on the animal, the better the cut; pork belly > pigs feet, ham is better than shank, backstrap and tenderloin is the best. Then he would say, “I’ve been poor, but I’ve never been poor enough to eat pigs feet or ham hocks!”

I feel I’d be betraying him to some extent if I ate chicken feet 😂 😆 🤣
