peach cobbler!

I let the peaches ripen a bit too much so it's a little mushy but tastes great!  Biscuit topping with some extra sugar,  egg washed with cinnamon sugar on top.

My dad used to make pie dough by hand (no ready made pie dough in those days), cut it into strips and make a lattice top for it. It looked as good as it tasted! He'd serve it hot with condensed milk poured over it. Fantastic!

I took some to Dave (his wife doesn't agree with peaches) and he loved it.  When I took some to Todd and Jen she was amazed. Evidently she has a mental block when it comes to the tiny kitchen space in their motorhome.  I'm thinking about inviting them over to "help" cook something.  It's not that hard to adapt, just figure out what parts can be prepared and set aside while you clean up for the next step.  The beauty in doing it that way is there's no sink full of dishes to do at the end. I always hated the clean up at the end when I had a huge resteraunt kitchen to work with.  It's amazing what you can do with minimal counter/sink space and a tiny stove if you plan it out.
